Fresh Eats from Cocina Abierta

I learn from our farmers and chefs every day here in Puerto Rico! 👩🏾‍🌾🌱👨🏼‍🍳Despite the small size, microgreens are rich in color, flavor and nutrition — with up to 40x nutrient density of mature counterparts and a short grow cycle at Frutos del Guacabo! I love seeing locally grown ingredients featured at my favorite restaurants… like Cocina Abierta that now has an even *more* genius menu which changes weekly to feature the freshest, seasonal, local ingredients from farmers across the island. Bravo, Chef Martin Louzao! May we all savor and celebrate each moment, each harvest, each flavor, each bite — like this heavenly sweet plantain carpaccio with avocado and mushrooms and… yes, microgreens.🍴🇵🇷 🙏🏾
