Dig in!!! It’s only fitting that Dig Inn would have an exquisite spread like this for my talk at their headquarters today.🍴🍅🌱 The eateries cocreate menus and plan harvests together with farmers to mindfully source seasonal, sustainable ingredients from 102 local, small-scale farms and partners with whom they have a direct relationship, personal connection, ongoing commitment and deep respect. Dishes are mostly veggies — fresh from the soil, cooked to perfection, used without waste — and wholly delicious. (This lettuce cup bruschetta tasted like a bite out of Italy 🇮🇹, in case you’re wondering.) It was a privilege to speak with the vibrant team driving this mission-driven, innovative, rapidly-growing restaurant. Thank you to the brilliant Dana Cowin for hosting me to share about my work with activism, public health, sustainability, organics, school lunch, food justice, and our ongoing work in Puerto Rico with local farmers around food relief, security and independence.
